Thai dish recipes: chicken massaman curry

Serves: 10-12 persons

1 1/2 kg. chicken thighs

8 yellow patatoes

400 g. small peanuts

1 kg. desiccated coconut

600 g. massaman curry paste

5 onions

1 bunch sour, ripe tamarind

Fish sauce

Good quality palm sugar

Cut the chicken into bite-sized cubes and marinate with salt for 15 minutes. Peel the potatoes and cut them into the cubes as for the chicken. Roast the peanuts until they turn yellow, the peel and boil until tender.

Fry the massaman curry paste until it releases a pleasant fragrance. Add the chicken and stir-fry it until cooked. Season with fish sauce and sugar. While it is frying, add some thin coconut milk to ensure that it does not boil dry. When the chicken is cooked, put it in the pot containing thin coconut milk, making sure not to put too much coconut milk in the pot.

Add the potatoes and peanuts to the pot. When the potato is cooked, season again with the tamarind juice, sugar and fish sauce. This will give the dish the classic "three tastes" - sour, salty and sweet. Over a low heat, boil the curry for some time to make sure that all tastes are mixed well. This will strengthen all three flavours.

Taste the curry before serving by dipping a piece of bread into it. If to your taste, add the thick coconut milk. Taste and adjust the seasoning as desired. The thick coconut milk should be the last thing to be added to ensure that the curry does not contain too much fat.
