Thai dish recipes: stir-fried mushrooms

Serves: 4 persons

2 cloves garlic

3 cm galangal

2 red chillies

1 tbsp oil

200 g. button mushrooms, halved

100 g. oyster mushrooms, halved

1 tbsp fish sauce

1 tsp Golden Mountain sauce

1/2 cup chopped fresh Thai basil

Chop the garlic. Finely slice the galangal and chillies. Heat the oil in a wok or frying pan.

Add the galangal, garlic and chillies to the wok and stir for 2 minutes. Add the button mushrooms and stir-fry for 2 minutes. Add the oyster mushrooms; cook for approximately 30 seconds, tossing constantly until the mushrooms begin to soften.

Add the fish sauce, Golden Mountain sauce and chopped basil, toss well. Serve immediately, as a side dish to accompany main courses and steamed rice.
