Thai dish recipes: noodles with fish, tao see and sweet peppers

Serves: 8-10 persons

1 kg. grouper or white smapper meat

300 g. straw mushroom

1 1/2 kg. Chinese kale

50 g. tao see

1 1/2 kg. large rice noodles

300 g. sweet pepper or banana chilli

200 g. fresh yello, green and red jalapeno chilli

6 garlic cloves

2 tbsps salt

1/2 tsp ground pepper

2 tbsps sesame oil

4 tbsps vegetable oil

2 tbsps light soy sauce

5 tbsps oyster sauce

1/2 cup vinegar

1 tsp sweet soy sauce

2 tbsps sugar

5 cups broth

4 tbsps Thao flour

Cut the fish into around 40 half inch pieces. Marinate with salt for 10 minutes. Rinse it with water three times. Place some ice on top to keep it fresh.

Chop fresh yellow, green and red jalapeno chillies and place in the vinegar. Chop the sweet pepper or banana chillies. Chop each straw mushroom into four pieces. Chop only the stalk of the Chinese kale.

Finely chop the garlic and tao see together.

Fry the rice noodles in the pan together with oyster sauce and sesame oil until the noodles become crispy. Divide into 12 dishes.

Use another pan to fry the garlic and tao see on low heat until it smells appetising. Add straw mushroom, Chinese kale stalks, sweet pepper or banana chilli and one liter of water.

Season with oyster sauce, light soy sauce and sweet soy sauce. When it start to boil, add the fish meat.

7.

Dissolve in some Thao flour. Slowly add it in the pan and stir quickly. Check whether it is thick enough. Top it on the noodles in the dish with 3-4 pieces of fish in each dish. Season with a little pepper.
